travelentils.

i’ve been away from home every few weeks
making it difficult to maintain my grocery routine & rotation
so i’ve been buying fresh foods that, despite being fresh, last a while.
potatoes, carrots, onions, and so on.
i flew back into minneapolis from austin on thursday,
but haven’t had time to go to the co-op.
i was saved by a few ingredients who’d survived my absence.

2 cups vegetable broth
1 cup brown lentils
1 medium yellow potato
1 medium yellow onion
1 bunch organic carrots
1 can muir fire roasted diced tomatoes
4 cloves garlic
3 tablespoons chili powder
kosher salt & pepper to taste
