officially addicted to quinoa, and for good reason.
although typically though of as a grain, quinoa is actually a seed.
cultivated by the incas, who knew what was up.
quinoa has more protein than any grain, and contains:
iron, calcium, potassium, zinc, vitamin e, selenium, manganese, magnesium, tryptophan, copper, phosphorus, fiber, and lignans.
get some.

1 cup red & gold quinoa, cooked.
3 cloves garlic, minced and sauteed in olive oil.
4 stalks celery, diced.
4 carrots, diced.
1 cucumber, diced.
1 gala apple, diced.
1/2 large lemon, juiced.
1/4 cup cilantro, chopped.
1/3 cup parsley, chopped.
3/4 cup pine nuts.
1 tablespoon ginger powder.
kosher salt to taste.

    Quinoa is good stuff! I discovered it a few years ago when I found out I had a wheat sensitivity and needed to change my diet. When I want pasta, I use quinoa noodles. High-five!
