spinach walnut manicotti.

All ingredients fresh & organic.

Filling: Ricotta cheese, basil, spinach, walnuts, garlic. Sauce: Big can of muir glen & divina roasted tomatoes (important!), 4 cloves garlic, basil, .25 yellow onion, rosemary (dried), thyme (dried), salt, pepper. So easy. So good. EAT. Not really into measuring when cooking, sorry if that confines the usability of the recipe but, honestly, you’d have to go really overboard with one of these ingredients to mess the thing up.
Simmer the red sauce for an hour, blend the filling ingredients and let them simmer in a sauce pan on low for 30 minutesish, cook the manicotti pasta in plenty of water, stuff the pasta, arrange in the pan, pour red sauce over, cover in your favorite italian cheese, bake at 400 for 30 minutes and then broil to get that browned goodness. Laziest recipe description ever? You can’t mess it up.
